Asparagus with Anchovy Vinaigrette & Hard Boiled Egg

With the summer season sprouting up…We all crave bright and colorful foods but it is not a time to be slaving away in the kitchen. It seems like weeks blend into weekends more than ever from June through August. This asparagus dish is simple yet surprisingly satisfying. Roasting the asparagus with some of the vinaigrette, which includes one of my favorite ingredients-oil packed anchovies, creates such a nutty flavor to the dish. When you cook down anchovies the fishy flavor melts into this umami burst. And, this vinaigrette is one of my staple dressings. Once you master it, I promise you will be drizzling it on everything from vegetables, to salads, to fish. With the crumbled egg, you can rotate this dish into any time of the day. Cheers! ingredients Ingredients: 1 pound asparagus, cleaned and trimmed 4-6 shavings of parmesan, lightly broken 1 hard-boiled egg, yolk and white separated and crumbled Fresh parsley Vinaigrette: 2 tablespoons of lemon juice Half a teaspoon red pepper flakes 3-5 anchovies, depending on how much you like them! 2 tablespoons of white balsamic or white wine vinegar 1/4 cup of olive oil Method:

  1. Assemble your vinaigrette. Finely chop anchovies, adding a bit of salt, and mashing into a paste. Add lemon juice, vinegar, and red pepper flakes. Slowly drizzle in olive oil, whisking constantly, until emulsified. Season to taste and reserve 1-2 tablespoons aside to drizzle on finished dish.
  2. Coat asparagus in vinaigrette and roast for about 10 minutes, until tender. Set aside to cool.
  3. Top with crumbled egg, remaining vinaigrette, and parmesan shavings.
