DIY Popcorn

Popcorn is my go-to for snacking: it’s healthy and fun to make, especially when you pop the kernels in a pot instead of a microwave. On top of that, popcorn has a bunch of health benefits like fiber and antioxidants. I love spices and condiments, so I started to play around with different sweet and savory toppings. Here are a few that I really love.

Use 3/4 cup of kernels per spice mix / Serves 4-6 people

Vanilla Bean Brown Sugar Caramel Mix:

Pop 3/4 cup of kernels in 2 tablespoons coconut oil

4 tablespoons Coconut oil

3 tablespoons Honey 1 vanilla bean, pod scraped

3 tablespoons Brown sugar

1 teaspoon of Kosher salt

Method:

1. Mix brown sugar and salt in small dish; set aside.

2. Melt 2 tablespoons coconut oil and add vanilla bean pod, once incorporated, coat popcorn in this mixture.

3. Sprinkle brown sugar mixture over popcorn and coat to toss.

 

 

Hot Sauce Lime Parmesan Spice Mix:

Pop 3/4 cup of kernels in 3 tablespoons unsalted butter

Juice of a whole lime

3 tablespoons hot sauce

1/4 cup parmesan

1 teaspoon of Kosher salt

Method:

1. Mix hot sauce and lime juice in a small bowl. Drizzle over popcorn and sprinkle with parmesan and Kosher salt.

Salty Curried Popcorn Spice Mix:

Pop 3/4 cup of kernels in 1 tablespoon vegetable oil

2 tablespoons curry powder

1 tablespoon sea salt

4 tablespoons unsalted butter

Chopped cilantro (optional)

Method:

1. Melt curry powder, sea salt, and butter in a small saucepan. Drizzle over popcorn and toss. Add chopped cilantro on top and additional Kosher salt to taste.
